But this rice custard really does the trick.
You start by adding a cup of skim milk, which you've already scalded, to four egg whites.
Then stir in a cup of cooked rice and a half a cup of golden raisins and two teaspoons of vanilla extract.
Then you divide the mixture evenly into seven six ounce custard cups and dust with nutmeg.
You set in a pan of hot water an inch or so deep and bake for half an hour at 350 degrees.
The result is a dessert that's made from foods that are very good for you.
It's high in fiber and won't push up that old cholesterol count.
