Do you know that the word pancakes comes from the Dutch word Panna Kocken which means bread cakes. We're going to be making all kinds of pancakes in the next half hour. If it's Sunday morning it must be pancake time at least in my house. Pancakes come in so many different sizes and shapes and flavors. They're really a lot of fun to make. Today I want to show you one of my favorite kinds of pancake batters. It's a yeast based batter and it tastes when you finish with it like eating a most delectable brioche. You have to have some lukewarm milk to proof the yeast. Now this has just been heated. It has to be cool enough so you can put your finger in but hot enough so that it's slightly uncomfortable. Pour this into your mixing bowl. It's one and a half cups of whole milk and one package of active dry yeast. And you can use the equivalent in cake yeast if you like. Sprinkle this on top of the milk and add two tablespoons of sugar to help that yeast grow and proof faster. Just put this in a warm place and let it proof until you see some bubbles. Here we have yeast that's been sitting there for five minutes. It smells good. It smells alive. Little bubbles are starting to form in the surface of the liquid. And now one and a half cups of all purpose flour. This can be just stirred right into the milk mixture. Now you don't have to use just white flour because if you'd like to vary the flavor we have at least three different variations right here. Cornmeal is great. Buckwheat which are delicious and whole wheat flour. Now we're going to add three egg yolks to the batter. Use large eggs. That's a pretty color egg. So mix that up. And four tablespoons of melted butter.
